- 76 g sunflower mince
- 1 can of black beans, rinsed and drained (250 g)
- 30 g fine-grained oat flakes
- 80 g tomato paste
- 2 garlic cloves finely chopped
- 1 large onion chopped
- 3 tbsp ground flaxseed
- 1 tbsp each onion powder / garlic powder
- 2 tsp oregano
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- 1/2 tsp chili (optional)
- Salt & Pepper
- Sauce: 400 ml vegetable stock
- Sauce: 100 ml plant-based cream
- Sauce: 80 g tomato paste
- Sauce: 1 tsp fresh ginger
- Sauce: 1 tsp curry powder
- Sauce: 2 tsp each of onion and garlic powder
- Sauce: 2 tsp oregano
- Sauce: 1 tsp cumin
- Sauce: 1/2 tsp each nutmeg, smoked paprika, chili (if you like it hotter)
- Sauce: 1 tsp brown sugar (or sweetener of your choice)
- Sauce: salt and pepper
- Sauce: 1 tbsp cornstarch
Zubereitung
- Blend all ingredients (except oil) in a blender several times in short intervals. Repeat until the mixture comes together.
- Now roll into balls.- about 1 tbsp per ball and preheat oven to 200 degrees C.
- Heat 3 tablespoons of organic cooking oil in a pan and fry the meatballs for about 7 minutes over medium heat. Stir well to ensure the meatballs are evenly cooked on all sides.
- Place the fried balls on a baking sheet lined with baking paper and bake for about 20 minutes, turning occasionally.
- Gravy: Place the tomato paste in a pan, add the plant-based cream, and stir until smooth. Gradually add the vegetable stock.
- Bring the sauce to a boil and add all the other ingredients except the starch and simmer over medium heat for about 12 minutes.
- In a small bowl, combine cornstarch with 1 tablespoon of water and add it to the pan. This will thicken the sauce slightly. Let it simmer for another 2-3 minutes.
- Pour the gravy over the vegan meatballs and serve with mashed potatoes, pasta, or rice! Store leftover gravy in a container in the refrigerator (it will keep for 3-4 days).
