PAD KRAPAO SUNFLOWER

Zutaten
- 76 g sunflower mince
- 2 cloves of garlic
- 2 shallots
- 1-2 red chili peppers
- 200 ml oil e.g. sunflowerFamily organic frying oil
- 4 eggs (vegan: without eggs, alternatively soft tofu)
- 2 tbsp fish sauce / or 2 tbsp NO-fish sauce (vegan option
- 4 tbsp soy sauce
- 2 tbsp oyster sauce (vegan: without)
- 1 bunch of Holy Basil / alternatively Thai basil
- 4 servings of steamed jasmine rice
Zubereitung
- Peel the garlic cloves. Peel and finely chop the shallots. Wash, deseed, and chop the chili pepper, then mash everything in a mortar and pestle until it forms a paste.
- Fry the fried eggs Thai style, which means the eggs are fried in a lot of oil so that the yolk is crispy while the other egg is nice and soft.
- Now fry the seasoning paste in a little oil, stirring constantly, until the spicy aroma of the shallots evaporates.
- Now add the sunflower mince and fry. Once the sunflower mince is cooked through, add the fish sauce, soy sauce, and oyster sauce and mix well.
- Finally, add the basil leaves and heat briefly.
- Prepare 4 bowls of jasmine rice. Spread the sunflower mince over the rice and top with a fried egg. Squeeze in lime juice. Serve immediately.
