Bolognese-Soße a la Bianca Zapatka

Zutaten

  • 76 g sunflower mince
  • 1 onion
  • 2 cloves of garlic
  • 100 g carrots
  • 100 g celery
  • 2 tbsp organic olive oil
  • 200 g tomato passata
  • 200 g chopped tomatoes
  • 1 tbsp tomato paste
  • 2 tsp Italian seasoning
  • 1 tsp raw cane sugar (to taste)
  • salt, pepper
  • 250 ml vegetable stock
  • 250g spaghetti
  • Yeast flakes, Parmesan alternative
  • fresh basil

Zubereitung

Peel the onion, garlic, carrots (if desired) and celery and cut into fine cubes.

Heat the organic olive oil in a non-stick pan or medium-sized non-stick pot and sauté the onion, carrots, and celery.

Then fry the garlic briefly (about 30 seconds).

Now simply add the organic sunflower mince until it turns a nice golden brown.

Now add the tomato paste and tomatoes and mix.

Add about 250 ml of vegetable stock.

Season the sauce with salt, pepper, Italian herbs, and sugar, and simmer over medium heat for about 15-20 minutes until the sauce has thickened (add a little vegetable stock if necessary).

In the meantime, cook the spaghetti in salted water until al dente and then drain.

Serve the spaghetti with the sauce and garnish with nutritional yeast and fresh basil if desired.
